What is Vitamin C?
Ascorbic acid is a water soluble vitamin required for the production of collagen - the protein in connective tissue. It also helps the body absorb iron from plant sources.

Absorption and Metabolism
Ascorbic acid is readily absorbed from the intestine. It is used by the body in about two hours and then usually out of the blood within three to four hours.

Natural Sources of Vitamin C

The best-known sources of vitamin C are citrus fruits, i.e.
oranges,
lemons,
limes,and
grapefruits.
Good vegetable sources include:
red and green peppers,
broccoli,
brussels sprouts,
tomatoes,
asparagus,
parsley,
dark leafy greens, and
cabbage

Vitamin C Requirements
The current (1989) recommended daily allowance (RDA) for an adult is 60 milligrams per day.

60mg per day is based on the amount of vitamin C needed to prevent clinical scurvy and provide body stores sufficient to prevent scurvy for around 30 days, plus "a margin of safety"

Toxicity:
As vitamin C is not stored appreciably in our body and excess amounts are eliminated rapidly, toxicity is unlikely. Overuse of vitamin C can result in Diarrhea, burning with urination, nausea, skin sensitivities etc. There is also some concern that high intake may cause kidney stones.
